Recipe Ingredients for chicken enchiladas

24 oz (raw) Chicken
12 oz Onions
5 oz Mexican Style Four Cheese
2.5 cup Instant Brown Rice
10 oz Mild Diced Tomatoes and Green Chilies
10 oz Old El Paso Sauce Enchilada Mild
4 oz Diced Green Chilies
10 tortilla 6" Low Carb Whole Wheat Tortillas 10ct

Recipe Directions for chicken enchiladas

  1. dice chicken into 1" pieces. mix chicken, onions and peppers with chili powder, salt pepper or other spices. cook unticook completely down until no water left in pan from frozen veggies.

  2. In separate pan mix 1.5 cups dry instant brown rice with Rotel, green chilis, chipolte chili powder and cumin. add addition 1/2 cup water. Cook until all water cooked off and rice is tender.

  3. put 1/4 cup of rice mixture in tortilla and 1/3 cup of chicken mixture in each tortilla with 1 Tbsp of shredded cheese. fold and put into sprayed glass 9x13" pan and bake for 25 mins with enchilada sauce over the wraps.

  4. When complete put one in each freezer container to take to work with you.
