Quick and easy recipe. My family loves them.

Recipe Ingredients for Chicken Enchiladas

10 ounce tomato soup,reduced sodium
10 ounce enchilada sauce
2 cups yogurt,plain,low fat
1 1/2 cups chicken,cooked,finely chopped
4 ounces cheddar cheese,reduced fat
3 tbsp olive oil
12 corn tortillas,sm

Recipe Directions for Chicken Enchiladas

  1. Preheat oven to 350 degrees.Combine soup,enchilada sauce and 1 cup of the yogurt until well-blended then set aside.

  2. Combine chicken,cheese and remaining 1cup yogurt.

  3. Heat oil in skillet until hot. Cook tortillas in hot oil, one at at ime, just until they become limp.Drain on a paper towel.(I warm mine in the microwave to avoid the oil.)

  4. Fill each with 1 heaping tbsp of chicken mixture and roll up.Arrange rolls, seam-side down, and close toghether in a shallow baking dish sprayed with nonstick spray.

  5. Pour the sauce mixture over rolls and Bake 20 to 30 minutes or until thoroughly heated.
