Simple shredded chicken enchiladas

Recipe Ingredients for Chicken Enchiladas

16 tortillas 6" White Corn Tortillas 30ct
8 oz 50% Light Cheddar
3 unit (yield from 1 lb ready-to-cook chicken) Chicken, Breast, Meat Only
1 medium (2-1/2" dia) Onions
1.5 cup, chopped Peppers, Sweet, Green
2.5 cup Old El Paso Sauce Enchilada Medium
1 tbsp Extra Virgin Olive Oil
8 serving Light Sour Cream

Recipe Directions for Chicken Enchiladas

Cook chicke n in half the enchilada sauce. saute onion and pepper in oilive oil. dip tortillas in warm enchilada sauce and fill with chicken, veggies and a bit of cheese. Pour remaining sauce and cheese over rolled enchiladas. Bake at 350 for 25 mins.
