Prepare these delicious and easy-to-make enchiladas for your next dinner party or potluck.

Recipe Ingredients for Chicken Enchiladas

1 pound of boneless chicken breast cut in small chunks
1 tablespoon of vegetable oil
1 cup of chopped onion
1 cup of diced green peppers
1 cloves of garlic, minced
1 flour tortillas
1 cups of grated cheddar cheese

SAUCE:
1 tablespoons of vegetable oil
1 tablespoon of flour
1 cup of chili powder
1 cups of chicken stock
1 ounces of tomato paste
1 teaspoon of dried oregano
1 teaspoon of ground cumin
1 teaspoon of salt

Recipe Directions for Chicken Enchiladas

  1. Bring water in a medium size pot to a boil. Once the water begins to boil, add salt and chicken breasts. Chicken should take approximately 20 minutes to cook, check to make sure it is cooked through before removing from pot.

  2. In the meantime, chop and saute the onion in a medium sized pan. First add olive oil to the pan over medium heat. Add the chopped onion and then the chili powder. Onions should take approximately 10 minutes to fully carmelize.

  3. Remove the chicken breasts from the pot and place on a cutting board. With two forks, proceed to shred the chicken.

  4. Now it's time to build your enchiladas. In a long, rectangular baking dish, add a small amount of enchilada sauce just to coat the bottom of the dish. This will prevent sticking.

  5. For each enchilada, add equal portions of beans, onions, chicken, cheese and jalapenos to the tortillas. Wrap the ingredients and place in the baking dish. Once all enchiladas are complete, bathe them with the remainder of the enchilada sauce.

  6. Place your enchiladas in a preheated oven, set at 375 F. Bake for 20 minutes. At the conclusion of 20 minutes, add a little bit of shredded cheese for presentation, bake for 2 to 3 more minutes and serve.
