Delicious homemade chicken enchiladas.

Recipe Ingredients for Chicken Enchiladas

8 tortillas
1/2 c. chopped onions
4 cloves garlic, minced
1 tsp. ground coriander
1/4 tsp. pepper
2 T. butter
3 T. flour
8 oz. sour cream
2 c. chicken broth
4 oz. diced green chili peppers
1 c. Monterey Jack cheese
2 c. chopped cooked chicken
1/4 c. sliced black olives
1 tomato
2 T. green onions

Recipe Directions for Chicken Enchiladas

  1. Wrap tortillas in foil. Heat at 350 for 10-15 minutes.

  2. For sauce: In a sauce pan cook onion, garlic, coriander & pepper in butter till onion is tender. Stir flour into sour cream; add to onion mixture. Stir in broth & chili peppers all at once. Cook & stir till thickened & bubbly. Remove from heat; stir in c. of cheese.

  3. For filling: Stir c. of the sauce into chicken. Place about c. filling on top each tortilla; roll up. Arrange rolls seam side down, in a lightly greased 12 x 7 inch baking dish. Top with remaining sauce. Bake covered at 350 for 35 minutes or till heated through.

  4. Sprinkle with remaining cheese. Bake uncovered about 5 minutes more till cheese melts. If desired, sprinkle with olives, tomatoes, and green onions. Let stand for 10 minutes.
