Delicious enchiladas, not too spicy.

Recipe Ingredients for Chicken Enchiladas

3 cup, chopped or diced Chicken, Breast, Meat Only
2 cup Cheddar Shredded Cheese
8 oz Sour Cream
4 oz Green Chiles
12 serving Flour Medium Tortillas
3 serving Chicken Broth
1/4 cup Enriched Unbleached White Flour
1 serving Ground Cumin
1 medium (2-1/2" dia) Onions
1 medium raw Bell Pepper Red

Recipe Directions for Chicken Enchiladas

  1. Boil chicken breast until fall-apart tender. Shred meat, set aside. Reserve broth.

  2. Saute onion and bell pepper in butter. Add green chiles. Add 1/4 cup flour, slowly add three cups reserved broth. Stir in sour cream. Add 1 cup sauce to meat, along with tsp. cumin and one cup cheese.

  3. Roll meat mixture into flour tortillas. Lay in 9x13 pan coated with cooking spray. Top with remaining liquid and cheese.

  4. Bake at 350 for approx. 30 minutes
