Recipe Ingredients for Chicken Enchiladas

3 tbsp onions, chopped
1 garlic clove, finely chopped
4 oz chilis, canned
10 1/2 oz cream of chicken soup
1 cup light sour cream
2 cups chicken breasts, cubed
1/2 cup shredded cheddar cheese, fat free
8 tortillas, whole wheat
1/4 cup milk, 1%

Recipe Directions for Chicken Enchiladas

  1. Preheat over to 350 degrees.

  2. Cook chicken.

  3. In medium bowl, combine sour cream and cream of chicken soup. Spread about 1/4 cup of mixture in bottom of 9x13 pan. Set aside.

  4. In large skillet, sautée onions, chilis and chopped garlic. Add cooked chicken and 1/4 cup of sour cream mixture.

  5. Fill tortillas with chicken mixture, roll up and place into 9x13 pan, seam down.

  6. Add milk to remaining sour cream mixture and pour over tortillas.

  7. Top with cheddar cheese and bake for 30-35 minutes, or until cheese is bubbly.
