Recipe Ingredients for Chicken Enchiladas

400 g chicken breasts
4 corn tortillas
75 g grated Cheddar cheese
1 red onion, finely chopped (260g)
400 g chopped tomatoes
1/4 teaspoon garlic powder
2 teaspoons chili powder
1/4 teaspoon ground cumin
1 dash of hot sauce

Recipe Directions for Chicken Enchiladas

  1. Sauce

  2. 1. Open the can of fresh tomatoes, blend them in the blender. This is a great way to use up extra garden produce. This is the foundation of the enchilada sauce.

  3. 2.Measure and add the garlic powder, chili powder, cumin, and hot sauce.

  4. 3. Stir well. Use this in your enchilada sauce recipes just like you would use a can of enchilada sauce you buy from the store

  5. Chicken:

  6. 1. Brown the chicken and onions.

  7. 2. Add half the sauce to the chicken and half the cheese.

  8. 3.Put chicken sauce mixture inside the tortillas and place on oven tray.

  9. 4.Pour the rest of the sauce over the wrapped tortillas and then sprinkle with cheese.

  10. 5. Heat in oven to melt the cheese and brown the tortillas.

  11. 6. Enjoy
