Faster than fast food and way more delicious, these cheesy chicken enchiladas come together in a snap!

Recipe Ingredients for Chicken Enchiladas

2 cups chicken breast, chopped
1 1/2 cups monterey jack cheese, shredded
10 oz fat free sour cream
4 oz green chiles, chopped, canned

Recipe Directions for Chicken Enchiladas

  1. Stir together first 4 ingredients (plus cilantro if desired). Spoon mixture evenly over each tortilla, and roll up.

  2. Arrange in lightly greased 13x9 in baking dish.

  3. Coat tortillas with spray.

  4. Bake at 350 for 35-40 min or until golden brown.

  5. Stir together 8 oz sour cream with 8 oz of green taco sauce and spoon over hot enchiladas.

  6. Top with desired toppings (ie, onions, olives, avocado, cilantro).
