Quick and easy chicken enchilada recipe

Recipe Ingredients for Chicken Enchiladas

2 pounds boneless, skinless chicken breast
15 ounces cream of chicken soup
10 whole wheat tortillas
15 ounces enchilada sauce
2 servings shredded colby jack cheese

Recipe Directions for Chicken Enchiladas

  1. Cut chicken into bite-sized pieces and saute until no longer pink.

  2. Pour 3/4 cup enchilada sauce into chicken and heat through.

  3. Place chicken into center of tortillas and roll up, placing in 13x9 baking dish.

  4. Coat enchiladas in remaining enchilada sauce and top with cheese.

  5. Bake at 375 degrees until cheese is melted and bubbly, about 15 minutes.
