Actually the best, truuuusttt me,

Recipe Ingredients for Chicken Enchiladas

10 flour tortillas
1 1/2 pound chicken, thigh, meat only
1 jalapeno pepper, diced
1 large onion, diced
1 1/2 cups cheddar cheese
3 scallions
3 tablespoons chili powder
3 cups tomato sauce

Recipe Directions for Chicken Enchiladas

  1. in a med-large pot (or shall i say sauce pan?)

  2. combine, sauce, chili pwdr, onion, jalapeno (both diced fiiinely) and chicken meat (i buy bone in skin on chicken thighs and pull off the skin, and when the sauce cools a bit, i just seperate the meat from the bone- its way cheeper than buying boneless skinless) you could also use breast meat...

  3. simmer this crap for about an hour (bring to a bubble, then turn to med low and put the lid on, stirring occasionally)

  4. cool the sauce a bit, and seperate the chicken from the sauce- shred chicken with 2 forks and set aside.

  5. strain the sauce, and put the solid bits in with the bowl of shredded chicken and 3/4 cup of cheddar cheese

  6. add 1 cup of sauce back into the chicken stuff- stir up and this is your filling- roll 10 flour tortillas filled with this stuff (you dont have to seal the ends of the tortilla)

  7. in a large baking dish (lasagne style) ppour 1 1/2 cups sauce on the bottom, put tortillas in a row

  8. pour the rest of the sauce over top, and add rest of cheese and the scallions,

  9. bake 15 mins 400 degrees

  10. to make gluten free- use corn tortillas or another gf tortilla
