Chicken Enchiladas made with 98% Fat Free Cream of Chicken Soup & Low Fat Cheeses

Recipe Ingredients for Chicken Enchiladas

2 lbs Chicken Breasts
1 onion
8 oz low fat cream cheese
10 1/2 oz 98% fat free cream of chicken soup
1 tsp cumin
1/2 tsp taco seasoning mix
14 oz tomatoes
8 low carb tortillas
8 oz enchilada sauce
1 cup low fat cheese

Recipe Directions for Chicken Enchiladas

  1. Pre-heat oven to 325

  2. In a large saucepan, sautee the chicken breasts, can of the diced tomatoes, diced onion and optional salt & pepper until chicken is thoroughly cooked

  3. Shred chicken breast mixture together preferably in a food processor (or alternatively by hand)

  4. Mix cooked chicken, can of the Cream of Chicken soup, the remaining half can of tomatoes, cumin, taco seasoning, cream cheese and cup of the Mexican cheese in a large saucepan and cook on medium heat until mixture is melted

  5. Apportion mixture into 8 flour tortillas and roll them up, placing them in a non-stick sprayed 9x13 pan

  6. Pour the enchilada sauce over the rolled enchiladas

  7. Cover with aluminum foil and bake for 40 minutes at 325

  8. Uncover and sprinkle remaining cup of the Mexican cheese blend and cook uncovered for an additional 5 minutes

  9. Allow to cool for 5-10 minutes and serve
