creamy and easy. Use whole wheat torillas.CC is having a hard time calculating. 3-6in whole wheat tortlllas have 130 calories. I calculated it at home and for 3 enchiladas it is 305 calories.

Recipe Ingredients for chicken enchiladas

16 oz. chicken breast, boneless, skinless
8 oz. cream cheese fat free
1 c. cooked rice
7 oz. diced green chilies
20 oz. enchilada sauce
2 oz. cheddar cheese
16 flour tortilla
1 T. cumin
1 t. chili powder

Recipe Directions for chicken enchiladas

  1. dice and cook the chicken. add the chilies and cream cheese. cook until melted then add the cooked rice.

  2. in a 9x13 pan. spoon filling into tortilla and place in pan seam side down. continue until all tortillas are filled or filling is gone. top with enchilada sauce adn top with shredded cheese. bake at 375 for 15-20 min till cheese is bubbly.
