A recipe from my Husbands Grandmother. Really easy and yummy!

Recipe Ingredients for Chicken Enchiladas

2 lbs boneless, skinless chicken breasts
1 medium onion, minced
2 cups of cheese
4 oz green chilies
12 flour tortillas
2 cans of cream of chicken soup
1 cup of chicken broth
2 cups of soy milk
1 cup sour cream

Recipe Directions for Chicken Enchiladas

  1. Preheat oven to 350

  2. Mix cooked chicken, onion, cheese, green chilies together and roll in tortillas.

  3. Put in a greased 9x13 pan.

  4. Combine chicken soup, chicken broth, milk, and sour cream and heat in a saucepan.

  5. Pour sauce over rolled tortillas.

  6. Baked @ 350 for 25 minutes.
