Made with leftover roasted chicken.

Recipe Ingredients for chicken enchiladas

10 white corn tortillas
1 cup chicken breast (cooked and shredded)
20 oz. enchilada sauce
6 oz. monterey jack cheese
3/4 cup onion
1/4 cup chiles
1/2 cup scallions
1/2 cup canned tomatoes
2 tsp olive oil

Recipe Directions for chicken enchiladas

  1. saute onions and chiles with olive oil until translucent

  2. add shredded chicken, spices to taste (Chili powder, cumino), saute 3 minutes

  3. add 1/3 cup enchilada sauce, stir and take off heat.

  4. drain tomatoes, add to enchilada sauce and spice to taste. Spread 1/2 cup sauce in bottom of glass casserole pan.

  5. in each tortilla add 1/4 cup of chicken mixture, sprinkle with cheese and scallions, roll and place in casserole.

  6. cover with remaining sauce

  7. sprinkle remaining cheese and scallions on

  8. bake at 350 for 20 minutes, uncovered.
