Cheesey enchiladas with a great cream sauce.

Recipe Ingredients for Chicken Enchiladas

2 cups shredded cheddar cheese
14 oz canned chicken
1 tsp cumin
8 ounces light sour cream
12 corn tortillas
4 oz diced green chili
3 chicken boullion cubes
2 1/2 cups water
4 tbsp butter
1/2 cup onion
1/4 cup flour

Recipe Directions for Chicken Enchiladas

  1. Cook chicken with salt and pepper

  2. Melt butter and saute onions. After onions are sauted and flour and mix well. After blended, add water and boullion cubes. Cook until thickened. Remove from heat and add sour cream. Stir well.

  3. Mix 1/2 of cheese, 1 c sauce, cumin, green chilis, and chicken in a large bowl.

  4. Dip totrilla in remaining sauce to soften, then fill with chicken mixture. Place in greased 13x9 pan.

  5. Pour some of remaining sauce over enchiladas. Bake at 350 degrees for 25 minutes.
