Chicken Enchiladas Recipe

Mild chicken enchiladas in a white cream sauce.

Recipe Ingredients for Chicken Enchiladas

1/2 cup onion, choopped
8 ounces cream cheese
1 tablespoon water
1 teaspoon ground cumin
1/4 teaspoon pepper
1/4 teaspoon salt
3 pounds chicken breast, chopped
8 flour tortillas
10 1/2 ounce cream of chicken soup
8 ounces sour cream
1 cup skim milk
1/4 cup green chilies, diced
1 cup cheddar cheese, shredded

Recipe Directions for Chicken Enchiladas

  1. Brown chicken and cut it into small cubes and set aside in a large bowl. Then saute onions until soft and transparent then add to chicken. To that add the water, the softened package of cream cheese, cumin, and chilies.

  2. Spray your baking dish with pam to keep the enchiladas from sticking.

  3. Put about 1/3-1/2 cup of the chicken mixture into each tortilla and roll it, placing it seam side down into the baking dish.

  4. For Sauce: Combine soup, sour cream, and milk and pour it over the enchiladas.

  5. Bake covered in 350 degree oven for 40 minutes or until heated through.

  6. Then sprinkle it with the cheddar cheese and bake another 4-5 minutes.

  7. You can prepare this ahead of time and let it sit overnight in your fridge before baking it.
