Recipe Ingredients for Chicken enchiladas

24 oz chicken breasts, cooked and shredded
16 oz sour cream
24 oz cheddar cheese, grated
20 flour tortillas
2 cans cream of chicken soup
8 oz jalapenos, diced
1 tbsp milk

Recipe Directions for Chicken enchiladas

  1. Combine soups, sour cream, chiles, 3/4 cheese, chicken and milk. Add extra milk if needed.

  2. Warm tortillas in microwave. Thinly coat each tortilla with margarine and fill with chicken mixture, reserving 1/4 of the mixture.

  3. Roll tortillas and place in large casserole dish (9 x 13 will hold 10 tortillas).

  4. Add additional milk to reserved chicken mixture and pour over tortillas, covering evenly. Sprinkle with cheese.

  5. Bake 20 minutes at 400 deg. (will freeze well before cooking)
