A Variation on Tyler Florence's Version.

Recipe Ingredients for Chicken Enchiladas

1 1/2 tbsp Vegetable Oil
12 oz boneless skinless chicken breast
1 tsp cumin
1 tsp garlic powder
1/2 yellow onion, chopped
1 clove garlic, minced
1/4 cup jalapeno, chopped
1/2 bell pepper, chopped
14 oz can diced tomatoes
1/4 tsp flour
8 corn tortillas
1 1/2 cup enchilada sauce
1 cup cheddar cheese

Recipe Directions for Chicken Enchiladas

  1. Coast large saute pan with oil. Season chicken with salt and pepper. Brown chicken on both sides about 7 minutes or until no longer pink. Sprinkle chicken with cumin, garlic powder and any addition spices before turning. Remove chicken to a platter to cool.

  2. Saute onion, garlic, bell pepper, jalapeno in chicken's juices until tender. Add canned tomatoes and saute 1 minute.

  3. Shred chicken with hands and combine with veggies, dust with flour to help set.

  4. Microvave tortillas for 30 seconds to soften them. Coat bottom of pan with a ladle of enchilada sauce. Dip each tortilla into enchilada sauce and then spoon 1/4 of chicken mixture inside and roll up and place seam side down. Top with remaining enchilada sauce and cheese.
