Good Mexican dish - serve with refried beans. Makes 10 enchiladas

Recipe Ingredients for Chicken Enchiladas

1 medium onion, chopped
10 oz boneless skinless chicken breasts, cooked and shredded
2 oz cheddar cheese
1 cup salsa
1/3 cup fat free plain yogurt
1 tablespoon chili powder
10 corn tortillas

Recipe Directions for Chicken Enchiladas

  1. Saute onion in PAM-sprayed skillet until tender. Remove from heat. Add yogurt, shredded chicken, 1/2 salsa, chili powder and Tabasco to taste. Divide chicken mixture evenly and spread down center of the corn tortillas.

  2. Roll up and place seam down into casserole dish.

  3. Mix remaining 1/2 salsa with enough water to make thinner and drizzle it or taco/enchilada sauce down tortillas and spinkle with shredded cheese.

  4. Bake covered at 350 for 20-30 minutes or until heated thru and cheese melted.
