You can add one can of green chili's if desired. To do so add 1/2 of can to both parts of the recipe.

Recipe Ingredients for Chicken Enchilada's

1/4 cup chopped onion
4 oz Fat Free cream cheese, softened to room temp
1 tbsp skim Milk
1 cup skim milk
1/4 tsp. Ground Cumin
2 1/2 cups cooked Chicken, shredded
10 flour tortillas
8 oz Fat Free sour cream
2 tbsp light butter
3 tablespoons all-purpose flour
1 cup skim milk
1 cube chicken bouillon
1 1/2 cups Monterey Jack Cheese

Recipe Directions for Chicken Enchilada's

  1. Saute' onions in a little cooking spray until tender. Remove from heat. In medium bowl mix Cream Cheese, 1 tbsp Milk, and Cumin. Add Onion mixture and mix thoroughly..then add chicken and mix again. Put in tortillas and roll. Place tortillas in greased lasagna pan.

  2. Melt 1/2 cup butter in a saucepan. Add flour and make a paste. Add 1 cup milk and bouillon cubes. Cook over low heat until thickened. Add pepper to taste.

  3. Combine soup, sour cream and 1 cup milk. Mix and then pour over the top of the tortillas. Cover with foil.

  4. Bake for 35 minutes or until heated through at 350 degrees F.

  5. Add cheese and bake 5 more minutes, uncovered.
