A baked cheesy blend of tortillas, cheese and chicken.

Recipe Ingredients for Chicken Enchiladas

20 ounces enchilada sauce
6 ounce monterey jack cheese
12 flour tortillas
1 pound chicken breast, in 1/2 " cubes

Recipe Directions for Chicken Enchiladas

  1. Preheat oven to 375F. Lighly grease 13 X 9" glass baking dish.

  2. Cook chicken in 2 T Enchilada Sauce until chicken is cooked through, 1 to 2 minutes per side. Add 3/4 C Sauce and 1/2 of cheese.

  3. Spoon small amounts of chicken and cheese mixture into each tortilla, roll up and place in baking dish. Repeat for all 12 tortillas.

  4. Bake until hot and bubbly, about 20 minutes. Let sit about 10 minutes before serving.
