Chicken Enchiladas Recipe

Easy, can be made in advance and frozen. Re-heats well. Double the recipe to freeze one for later.

Recipe Ingredients for Chicken Enchiladas

15 Corn Tortillas
2 lbs chicken breast
30 oz green enchilada sauce,
8 oz shredded pepper jack cheese
8 oz shredded cheddar cheese
8 T sour cream
16 T salsa
1 tsp olive oil
1 tsp Cumin
1 dash Cinnamon

Recipe Directions for Chicken Enchiladas

  1. Boil the chicken breast until cooked through.

  2. Drain and cool.

  3. When cool, shred the chicken and return to the pot.

  4. Add the can of enchilada sauce to the chicken and simmer.

  5. Add 1 tsp Cumin and a dash of Cinnamon (optional)

  6. While the chicken is simmering, warm the Corn

  7. Heat oven to 250F

  8. Lay Tortillas on a baking sheet

  9. Brush Tortillas with Olive Oil

  10. Warm Tortillas in the oven to soften them up.

  11. Cut Corn Tortillas in half.

  12. Preheat oven to 375F

  13. Put one layer of the halved Corn Tortillas, overlapping the edges, in the bottom of a 10x14 casserole dish.

  14. Spoon half of the chicken/sauce over the corn tortillas.

  15. Sprinkle the cheddar cheese over the chicken.

  16. Layer the rest of the Corn Tortillas over the cheese.

  17. Spoon the rest of the chicken mixture over the Tortillas.

  18. Sprinkle the pepper jack cheese over the top.

  19. Cover with aluminum foil and bake for 30 minutes, or until heated through and the cheese is melted.

  20. Serve with sour cream and salsa
