Chicken, Rotel, Black beans, and Cheese make for easy and GREAT enchiladas!

Recipe Ingredients for Chicken Enchiladas

1 lb. chicken breast
2 cloves garlic minced
1/2 cup green onions
15 oz. black beans (1 can)
3 cups cheddar cheese (or jack)
1 oz bacon (3 strips)
10 oz. diced tomatoes(Ro-Tel)
10 tortillas
1/2 cup sour cream

Recipe Directions for Chicken Enchiladas

  1. Cook chicken and shred.

  2. Cook bacon and reserve drippings.

  3. Cook garlic and onions in bacon drippings until tender.

  4. Add chicken, beans, tomatoes(Ro-Tel) and simmer.

  5. For each tortilla, smear a little sour cream, sprinkle a little cheese, and spoon in chicken mixture.

  6. Place rolled tortilla seam side down in a greased casserole dish.

  7. Top all enchiladas with remaining cheese.

  8. Bake at 350 degrees for 25-30 minutes.
