healthier version of enchiladas using corn tortillas

Recipe Ingredients for Chicken enchiladas

6 corn tortillas
16 oz enchilada sauce
1 lb chicken breast
8 oz mozarella 2%
4 tomatoes
2 green peppers
2 peppers, jalapeno
1 onion
1 tsp olive oil

Recipe Directions for Chicken enchiladas

  1. Saute chopped vegetables in olive oil. Remove from pan. Saute chicken in olive oil (or use shredded, pre-cooked chicken.) Layer baking dish with 1/4 of enchilada sauce, 1/3 vegetables/1/3 chicken and 3 corn tortillas - tear into pieces to cover all meat and vegetables. Add 1/3 of grated cheese.

  2. Repeat layers finishing off with final layer of cheese. Bake at 300F for about 45 minutes. Freezes well.
