low fat and delicious :-) I leave out the corn for my son. Does not taste low fat! Goes great

Recipe Ingredients for chicken enchiladas, low fat

6 corn tortillas
1 1/2 cups shredded cooked chicken breast
1/2 cup black beans
1 cup medium or hot salsa
8 oz fage 0%
1/2 cup reduced fat sour cream
1/2 cup reduced fat cheddar, shredded
1 small onion, chopped
1/2 bell pepper, chopped
1/2 cup sweet corn

Recipe Directions for chicken enchiladas, low fat

  1. Preheat oven to 350 degrees.

  2. lightly saute onions and peppers with the chicken, I use a small amount of water for moisture, until onions are beginning to soften

  3. Coat an 8-inch by 8-inch baking dish with nonstick cooking spray. Warm tortillas according to instructions on package.

  4. Combine shredded chicken and veggies. Mix salsa, yogurt and sour cream and spoon half the salsa mixture into the chicken, beans and corn. Blend well.

  5. Divide chicken mixture among the tortillas. Carefully roll tortillas and place them seam down in the baking dish. Spoon remaining salsa mixture over the tortillas. Sprinkle cheese on top. Cover with foil and bake for 30 minutes.
