Recipe Ingredients for chicken enchiladas with green sauce

18 oz cream of chicken soup
12 corn tortillas
1/4 c vegetable oil
8 oz colby cheese
8 oz chicken
1/2 c jalapenos

Recipe Directions for chicken enchiladas with green sauce

Boil chicken and whole jalapenos together until chicken is cooked through, set aside and cool. Soften corn tortillas in 1/4 c oil in small skillet (put in hot oil for approx 10 seconds) and drain on paper towels. Shred chicken. Remove stem from jalapenos and cut in half, toss into blender with cream of chicken soup until well blended. Layer in casserole dish: soup mix on bottom, 6 tortillas, chicken, 1/2 of the shredded cheese, 6 tortillas, soup mix, cheese on top. Bake at 375 for 20 minutes until cheese is bubbly.
