from Rene Burnside, Brooks Elementary School I prefer to bake this in the oven at 350 degrees, covered for 35-40 minutes or so, and uncovered for an additional 10 minutes or so. It just tastes a bit better. However, if time is a crunch, it works to cook it in the microwave covered with plastic wrap or a lid. It's great the second day, reheated in the microwave.

Recipe Ingredients for Chicken Enchiladas Casserole

1 cup fat-free, reduced-sodium chicken broth
14 oz. canned condensed cream of chicken soup
1/2 cup green chili peppers, chopped
2 tbsp minced onion
1 tbsp minced garlic
8 corn tortillas
2 cup cheddar cheese, shredded
10 oz tomatoes and green chilies, Rotel
1 1/2 cups of Light Sour cream
3 breast chicken, cooked and cubed

Recipe Directions for Chicken Enchiladas Casserole

  1. Combine cubed chicken, broth, soup, green chiles, onion, 1/4 cup Rotel, garlic in glass bowl.

  2. Cover with plastic wrap, cook on high in microwave oven for 5 minutes, stirring once.

  3. In a buttered 2 quart casserole, layer 1/3 of the tortillas, 1/2 chicken mixture and 1/3 cheeses. Repeat layers, ending with a layer of tortillas, saving the last 1/3 cheese.

  4. Cover tightly with foil. Bake for 1/2 hour at 375 degrees.

  5. Drain remaining Rotel, mostly, and mix with sour cream. Spread on top of last layer of tortillas. (Optional-crush some tortilla chips and place on top of the tortillas.)

  6. Then spread remaining cheese on top of that.

  7. Bake another 1/4 hour to melt the last of cheese.
