A nice hearty soup for a cold day, one of my families favorite meals!

Recipe Ingredients for Chicken Enchilada Soup

1 cup Golden Masa Harina Corn Flour
6 cup Soup, Chicken Broth
8 oz Pasteurized Process Cheese Spread
1 pepper Peppers, Jalapeno
1 medium (2-1/2" dia) Onions
1.25 cup Tomatoes Crushed In Puree
3 tsp Garlic
1 tsp Cumin
1 tsp Chili Powder
0.25 tsp Pepper, Red Or Cayenne
1 tbsp Vegetable Oil, Canola
2 cup (8 fl oz) Water

Recipe Directions for Chicken Enchilada Soup

  1. Dice onion, and jalapeno.

  2. Heat oil, and 1 TB of broth in a large pot. Add diced garlic, onion, jalapeno, and seasonings.

  3. Mix Masa with 2 cups of water. Add to pot, and cook, stirring the whole time for 3 minutes. Add crushed tomatoes, and bring to a simmer.

  4. Once simmering, add velveta in pieces, stirring well after each addition. Once all velveeta has been added, bring to a simmer, stirring constantly. Serve while hot, topping with with pico de gallo, crunchy totilla strips and cheese.
