Recipe Ingredients for Chicken Enchilada Soup

1 serving Extra Virgin Olive Oil
1 small Onions
242.8 grams Black Beans - 50% less sodium
248 grams Tomato Sauce No Salt Added
5 cup Light
1 serving In Adobo Sauce Chipotle Peppers
2 cup Diced Tomatoes
2 cup Corn, Sweet, Yellow
1 tsp Cumin
1 tsp Oregano, Ground
0.5 tsp Oregano, Ground
16 oz Boneless, Skinless Chicken Breast, frozen

Recipe Directions for Chicken Enchilada Soup

  1. Heat 2T oil in a saucepan over medium-low heat. Add 1/2 chopped onion and 3 clovesgarlic and sauté until soft, 3-4 minutes. Slowly add5 C chicken broth,1 C tomato sauce and 1-2 tsp.chipotle adobo sauce and bring to a boil. Add1/4 C cilantro and remove from heat. Pour into crock pot.

  2. To the crockpot, add 2 C low sodium drained beans, 1 C petite diced tomatoes,2 C corn,1 tsp cumin, 1/2t oregano and stir. Add 2 boneless skinless raw chicken breasts; cover and cook on low heat for 4-6 hours.

  3. Remove chicken and shred with two forks. Add chicken back into the soup, adjust salt and cumin to taste. Serve in bowls and top with fat free cheese and scallions.
