Recipe Ingredients for Chicken Enchilada Soup

2 cups reduced sodium chicken broth
1 1/4 cup green enchilada sauce
1/4 cup celery, chopped
1/3 cup onion, chopped
10 ounces Libby's pumpkin
1 cup corn
70 grams (1/3 cup) orange bell pepper, chopped
7 ounces chicken breast, chopped
2 cups water
1/4 teaspoon sea salt
1/2 teaspoon chili powder
1/4 teaspoon cayenne pepper
1/8 teaspoon black pepper
1 teaspoon corn oil

Recipe Directions for Chicken Enchilada Soup

  1. Bring chicken broth to a boil in a medium/large pot. Add onion, celery, and orange pepper; let bubble till tender-crisp (5 minutes).

  2. Add pumpkin and green enchilada sauce, stirring till smooth. Once soup returns to a low boil, add the chicken and corn, as well as the chili powder, cayenne, black pepper, and sea salt. Bring to simmer for 15-20 minutes, adding water every once in awhile (soup will be thick and velvety, but if you don't add water, it will become too thick).

  3. Add corn oil and let simmer another few minutes.

  4. Serve on its own or top with Mexican-esque toppings: Mexican cheese, sour cream, cilantro, tortilla chips, hot sauce, etc.
