Recipe Ingredients for Chicken Enchilada

2 tsp olive oil
1 cup onion, chopped
2 cloves garlic, minced
1 tsp cumin, ground
15 oz navy beans, can drained
28 oz diced tomatoes, can
28 oz chicken broth
8 oz tomato sauce
8 oz green chilies, chopped
2 tsp oregano, dried
3 1/2 cups chopped chicken
1/2 cup cilantro, chopped
1 cup cheese, shredded

Recipe Directions for Chicken Enchilada

  1. Heat oil in large pot. Saute onion, garlic, and cumin until onion is soft.

  2. Drain and rinse beans. Add beans, tomato with liquid, and broth. Heat to a boil. Reduce heat.

  3. Stir in tomato sauce, chilies, oregano, and cooked chicken. Simmer 15 minutes.

  4. Stir cilantro and 1 cup of cheese until melted.

  5. Serve with tortilla strips on the side.
