Chicken Enchilada Recipe

A great use for left over chicken. Add olives and canned green peppers for a special treat.

Recipe Ingredients for Chicken Enchilada

9 corn tortillas
14 oz tomato sauce
1 tsp olive oil
1/4 cup chopped onion
1 tsp minced garlic
2 cups chili beans
1/2 cup sour cream
2 cups grated cheddar cheese
2 cups cooked chicken
1 tsp chili powder
1 tsp garlic powder
1 tsp cumin
1 tsp onion powder
1 tsp garlic powder

Recipe Directions for Chicken Enchilada

  1. Heat oil in a pan. Add onions and garlic with a pinch of salt. Stir until tender. Add tomato sauce, spices and chicken. Cook 1 minute or until heated. Turn off heat.

  2. Dip 3 tortillas into the tomato mix, coat both sides. Lay into a 9x13" casserole dish, tearing 1 in half to cover the bottom of the dish.

  3. Spread half of the chicken mix over the tortillas. Lay 3 more coated tortillas over the chicken.

  4. Spread the chili beans over the tortilla layer. Spread the sour cream over the beans. Sprinkle with half of the grated cheese. Add the remaining chicken mix.

  5. Lay the last 3 coated tortillas over the top. Sprinkle with the remaining cheese.

  6. Bake at 375 degrees for 20 minutes or until bubbly on the sides of the casserole.
