Use 12" Rudy's Organic Multigrain Wraps( same caloric value) and cut in half to make 12 enchiladas.

Recipe Ingredients for Chicken Enchilada

16 oz chicken breast
15 oz cream of chicken soup
12 oz chicken broth
8 oz. fat free plain yogurt
1 onions, sauteed
1/2 cup green chili, chopped & sauteed
2 tbsp cilantro, chopped
1 tsp cumin
1 tsp garlic powder
6 whole wheat tortillas
2 cups cheese, shredded

Recipe Directions for Chicken Enchilada

  1. Combine soup, 3/4 can chicken broth, and sour cream. Set aside 1 cup of this mixture. To the remaining mixture, add chicken, onion, pepper, and spices to taste. Add 1 cup of the cheese.

  2. Place 2-3 T. of mixture onto each tortilla, roll up, and place the tortillas in 2- 9x9 pans. Add the remaining chicken broth to the reserved soup mixture and pour over enchiladas in each pan. Sprinkle remaining cheese over enchiladas. Cover foil pan tightly with foil or plastic wrap and freeze, making sure to label with ingredients and baking instructions. Cook other pan of enchiladas at 350F until bubbly, about 30 minutes
