Chicken enchilada stuffing to go between tortillas

Recipe Ingredients for Chicken enchilada

2 medium raw Bell Pepper Green
1 medium White Onion
1.764 oz Cilantro
10 oz Mild Diced Tomatoes and Green Chilies
10 oz Tomatoes Diced
2 cup, chopped Squash, Summer, Zucchini, Includes Skin
24 oz (raw) Chicken
16 oz Enchilada Sauce

Recipe Directions for Chicken enchilada

  1. Dice all veggies and add to pan covered with olive oil spray

  2. Cook on medium high heat, while cooking slice chicken breasts into small chunks, then add to cooking veggies in pan

  3. Add tomatoes and mix

  4. Add salt, oregano, cumin, garlic powder to taste

  5. When chicken and veggies are soft and cooked, and some of the liquid has reduced, add enchilada sauce and continue heating

  6. When the mixture is ready, spoon over corn tortillas as desired.
