Quick, Easy & Delicious! This healthy quiche blends the flavors of Mexico with the sophistication of the French. Serve warm with small garden salad. Top with sour cream.

Recipe Ingredients for Chicken Enchilada Quiche

1 Pet-Ritz Pie Crusts, Frozen
4 eggs
1 cup half-and-half or milk
12 1/2 ounce chicken breast, drained (1 1/2 cups)
1 1/2 cups tortilla chips, broken
2 cups shredded Monterey Jack cheese (8 oz)
1 cup shredded Cheddar cheese (4 oz)
1 cup Green Salsa
1/2 teaspoon salt
1 pinch pepper
4 slices tomato
1 chopped jalapeno pepper, if desired
1 sour cream, served on top

Recipe Directions for Chicken Enchilada Quiche

  1. Heat oven to 350F.

  2. In medium bowl, beat eggs with wire whisk until blended.

  3. Beat in half-and-half.

  4. Stir in chicken, chips, both cheeses, 1 cup salsa, the green chiles and salt.

  5. Pour into crust-lined pan.

  6. Sprinkle pepper over top of filling.

  7. Top with 4 tomato slices

  8. Bake 55 to 65 minutes or until crust is light golden brown and knife inserted in center comes out clean. Let stand 10 minutes before serving.

  9. Cut into wedges.

  10. Serve with sour cream and/or salsa.

  11. Substitution

  12. Use 1 1/2 cups leftover cooked chicken or turkey for the canned chicken.
