Recipe Ingredients for Chicken enchilada pie

3 tbsp Vegetable Oil, Canola
6 oz (raw) Chicken
2 tsp Cumin
2 tsp Garlic Powder
1 tsp Mexican Seasoning
1 medium raw Onion Red
2 clove Garlic
1 cup Corn, Sweet, Yellow
5 pepper Green Chilies
3 tbsp Chipotle Peppers
3.5 cup Stewed Tomatoes No Salt Added
0.13 cup Gold Medal All Purpose Flour
16 tortillas 6" White Corn Tortillas 12ct
1.5 cup Old El Paso Sauce Enchilada Mild
8 oz Colby

Recipe Directions for Chicken enchilada pie

  1. Brown chicken in oil until brown. sprinkle with cumin, garlic powder and mexican spice before turning. Remove chicken and allow to cool.

  2. Saute onion and garlic in chicken drippings until tender. Add corn and chilies. Stir well to combine. Add canned tomatoes and saute one minute. Pull chicken breasts apart by hand to shredded strips. Add chicken to pan of vegetables. Dust mixture with flour to help set. Microwave tortillas for 30 seconds to make them more pliable. Ladle a little enchilada sauce into the bottom of a baking dish. Liner bottom with corn tortillas. Layer chicken mixture, cheese, enchilada sauce and tortillas until all ingredients are used. (much like lasagna) Bake at 350 until hot and bubbly.
