Use with 8 low-carb tortilla shells (non included in nutritional breakdown)

Recipe Ingredients for Chicken Enchilada Filling

3 chicken breasts, cubes, ckinless
8 oz mushrooms, sliced
1 jalapeno pepper, diced and seeded
1 c. onion diced
3 1/2 cups stewed tomatoes, italian style, not drained
2 t. salt
8 oz. cheddar cheese, shredded fat-free

Recipe Directions for Chicken Enchilada Filling

  1. Sweat onion and jalapeno for 1 minute. Then add all other ingredients except chicken. Cook 5-8 minuntes until sauce starts to thicken.

  2. Cook chicken. Add 1/2 of the sauce.

  3. Add enough sauce to wet the bottom of an 9X13 baking dish.

  4. Add 1/8 of chicken mixture and just less than 1 oz cheese to each tortilla. Roll. Place tortillas side by side, seam down, in the baking dish.

  5. Add the last 1/2 of sauce to top of enchiladas. Sprinkle with remaining cheese.

  6. Bake in 375 degree oven until cheese melts.
