This recipe makes 12 x 12oz servings. Increase the heat by adding additional chili powder and cayenne, or topping with sliced pickled jalapenos.

Recipe Ingredients for Chicken Enchilada Casserole

18 corn tortillas
24 oz chicken breast meat
12 oz 2% cheese
16 oz fat free refried beans
16 oz Ranch Style beans
12 oz corn
12 oz green chili peppers
10 oz enchilada sauce
10 oz Rotel tomatoes
12 oz onion
6 oz carrot
12 oz yellow squash
1/3 c chili powder
1/2 t cumin
1 t black pepper
1 t oregano
1 T rubbed sage
1 t salt
1 T butter
2 T olive oil
2 T cider vinegar
2 T Louisiana Hot Sauce

Recipe Directions for Chicken Enchilada Casserole

  1. Brine boneless, skinless chicken breasts (soak in salt water) for at least 2 hrs.

  2. Rinse and steam chicken until fall-apart tender, then set aside to cool.

  3. In a stockpot, saute minced onion in oil/butter until caramelized, then add grated carrot, thinly sliced yellow squash, Rotel diced tomatoes and green chilis, and canned, chopped Hatch green chilis and saute together until much of the liquid has evaporated away.

  4. Pull apart chicken meat with a fork and add chicken, drained Ranch Style beans *reserve the liquid*, frozen corn kernels, chili powder, cumin, oregano, salt and sage to the vegetable mixture.

  5. In a separate pan, combine enchilada sauce, refried beans, the liquid from the Ranch Style beans, vinegar, Louisiana Hot Sauce (such as Trappy's Red Devil) and black pepper and heat to near boil and allow to simmer for 10 minutes

  6. In a large lasagne pan that has been sprayed with non-stick spray, layer as follows:

  7. sauce->6 tortillas->meat/veg

  8. ->6 tortillas->sauce->meat/veg

  9. ->6 tortillas->any remaining meat/veg

  10. ->sauce->optional pickled jalapeno slices

  11. ->shredded 2% cheddar cheese.

  12. Bake covered loosely in a hot 375 oven for 55 minutes.

  13. Uncover, and bake an additional 10-15 minutes at 350, until cheese begins to get toasty.

  14. *If you don't have a large, deep, lasagne pan, the recipe can be used to make 2 smaller cassaroles. The recipe freezes very well.
