Great way to use up leftover chicken fajitas

Recipe Ingredients for chicken Enchilada Casserole

2 cups chicken thighs, diced
10 oz enchilada sauce
8 oz enchilada sauce, green chili
15 oz tomatoes, diced
1/2 cup sour cream
2 cups cheddar cheese, shredded
12 corn tortillas

Recipe Directions for chicken Enchilada Casserole

mix together chicken, tomatoes, 1 cup each of the enchilada sauces. Place 6 tortillas on bottom of 13x9 pan and cover with 1/2 of the chicken mixture. Layer the rest of the tortillas, and rest of chicken. Cover with cheese and pour any extra enchilada sauce on top. Bake at 375F for 20 minutes or until bubbly and cheese is melted.
