12 oz skinless, boneless chicken breast
15 oz diced tomatoes
2 cup yellow rice
3 oz american cheese

Recipe Directions for Chicken Enchilada Casserole

  1. cook yellow rice according to directions

  2. saute onion and garlice

  3. saute cube chicken

  4. Add tomatoes

  5. Once rice is done, add all ingredients.

  6. Put in a casserole dish put cheese on top

  7. bake in 350 oven until cheese is melted
