Easy and good - I use roasted chicken instead to make it easier and faster!

Recipe Ingredients for Chicken Enchilada Casserole

2 pounds skinless, boneless, chicken breasts
1 can condensed cream of celery soup
10 3/4 ounce condensed cream of chicken soup
10 ounce enchilada sauce
14 1/2 ounce diced tomatoes
4 ounce diced green chiles
1 pinch garlic powder
1 teaspoon chili powder
16 ounces shredded cheddar cheese
10 flour tortillas

Recipe Directions for Chicken Enchilada Casserole

  1. Preheat oven to 350 degrees

  2. In a 5 quart pot, combine all ingredients except tortillas and heat over medium high until cheese is melted and all of the ingredients are mixed well.

  3. In a 9 x 13 inch baking dish, layer the mixture like lasagna. Be sure to put a thin layer of mixture on the bottom to prevent sticking.

  4. Bake 45 minutes to 1 hour - until cheese starts to brown and bubble.

  5. Let stand and cool for at least 10 minutes before serving.
