Recipe Ingredients for Chicken Enchilada Casserole

6 corn tortillas
1 can mushroom soup
8 oz. chopped chicken breast
1/4 c. green chile
4 oz. low-fat cheddar cheese

Recipe Directions for Chicken Enchilada Casserole

  1. line baking pan with 3 tortillas

  2. combine soup, chicken and green chile in saucepan.

  3. Add enough water to make thick sauce.

  4. Heat through.

  5. pour 1/2 of chicken mixture into pan.

  6. Sprinkle with 1/2 of the cheese.

  7. repeat layers ending with cheese.

  8. Bake at 350degrees for 30-45min until cheese is melted and sauce is bubbling.
