Recipe Ingredients for Chicken Enchilada Casserole

0.2 cup Refried Beans
2 serving Yellow Corn Tortillas
0.5 cup, shredded Cheddar Cheese
2 cup Progresso Light Soup Southwestern Style Vegetable
0.75 cup Rice, Brown, Medium-grain, Cooked
1 cup, chopped or diced Chicken, Breast, Meat Only
1 medium Red Bell Pepper

Recipe Directions for Chicken Enchilada Casserole

  1. Cook chicken and cut into bite size pieces with red peppers

  2. Add soup and heat to boiling

  3. Add rice, cover and simmer for 10 minutes

  4. Cover tortilla with 1 tbsp beans and place in bottom of casserole dish

  5. Top with 1 cup soup mixture and cheese. Repeat layer x2

  6. Top with remaining tortilla and remaining cheese. Bake at 375 for about 20 minutes.
