Recipe Ingredients for Chicken Enchilada Casserole - quantity

10 pounds chicken breast
1 oz garlic
10 pounds bell peppers
5 pounds onions
1 1/2 cups canola oil
5 pounds cheddar cheese
1 1/2 gallons red enchilada sauce
96 flour tortillas
10 cups chicken broth

Recipe Directions for Chicken Enchilada Casserole - quantity

  1. Saute onions & garlic in hot oil until translucent. Add chicken and cook thoroughly.

  2. When cooked, add chicken broth & enchilada sauce. Simmer 10 minutes.

  3. Add all peppers and cook for another 10 minutes.

  4. Spray 4 pans with non-stick oil spray. Layer ingredients: Lay flour tortillas in pan, spoon in chicken mixture and shredded cheese.

  5. Repeat 3 times and top with cheese. Bake at 375 degrees, or until 180 degrees. Cut each pan into 24 equal servings.
