Recipe Ingredients for Chicken Enchilada Casserole Low Fat

2 1/2 cups cooked chicken
8 tortillas
10 oz 98% fat free cream of chicken soup
1/4 cup smart balance light
16 oz fat free cheddar
6 oz green chilis
10 oz fat free sour cream

Recipe Directions for Chicken Enchilada Casserole Low Fat

  1. cook chicken breasts and cut in pieces

  2. mix all ingredients together

  3. spread 3/4 cup on bottom

  4. put 1/2 cup filling in each tortilla and roll up and place seam side down in 9/13 inch pan

  5. save 1 cup and top of tortillas

  6. seal tightly with aluminimum foil and bake at 350 for 20 minutes.

  7. uncover and spread 1/2 cup cheddar and 3 chopped greean onion on top and bake until cheese is melted
