Recipe Ingredients for Chicken Enchilada Bake

0.86 pounds chicken breast
1 large onion, chopped
2 cloves garlic, chopped
1 jalapeno pepper, seeded and chopped
1 green pepper, chopped
1 yellow pepper, chopped
1 cup corn kernels
1/2 cup lowfat sour cream
2 tbsp lime juice
1 cup cilantro, chopped
1 cup cheddar cheese, shredded
58 g tortilla chips

Recipe Directions for Chicken Enchilada Bake

  1. Heat oven to 425.

  2. Boil chicken in salted water for 10-12 minutes until fully cooked. Cool and shred.

  3. In a nonstick skillet sprayed with Pam, cook onion with salt and pepper for 5 minutes. Add the garlic and peppers and cook, covered, until tender, 5-6 minutes. Stir in the corn, sour cream and lime juice. Fold in the chicken, cilantro and cheese and transfer to a 2-qt casserole dish.

  4. Sprinkle crumbled tortilla chips and dust with chili pepper.

  5. Bake 12-15 minutes.
