less fat version. Regular version contains fried tortillas then dipped in green chili sauce. Serve with spanish rice.

Recipe Ingredients for Chicken enchilada bake

6 oz. boneless skinless chicken breast
1 taco seasoning
3 scallions
1/2 cup cilantro
16 oz. cheese
16 corn tortillas
16 oz. green chili sauce

Recipe Directions for Chicken enchilada bake

  1. boil chicken breast

  2. drain chicken

  3. add taco seasoning as directed

  4. add cilantro and scallions

  5. simmer on low heat

  6. warm torrillas

  7. spray 9 1/2 x 12 baking pan with non stick spray

  8. dip tortillas in green chili sauce

  9. line the bottom with 1/2 of the tortillas

  10. drain the chicken and add on top

  11. pour 1/2 cup of chili sauce on top of chicken

  12. add 3/4 package of cheese

  13. repeat tortilla layer on top

  14. sprinkle the remaining chese on top

  15. cover with foil

  16. bake 25 minutes
