This Filipino dish was my favorite as a kid!

Recipe Ingredients for Chicken Empanada


Filling:
1 1/2 cups cooked chicken meat
2 chopped onions
2 cups diced potatoes
1/4 cup evaporated milk
1/2 tsp. pepper

Crust:
2 cups all-purpose flour
1 tsp. salt
6 tbsp. water
2/3 cup butter
2 tbsp. white sugar

Recipe Directions for Chicken Empanada

  1. Make the filling first.

  2. In a large frying pan, saute onion, add all ingredients except milk.

  3. Cook for 5 minutes, add milk and cook for another 3 minutes.

  4. Set aside and let cool.

  5. Preheat the oven to 350 degrees.

  6. For crust, mix sugar, salt, and flour.

  7. Cut in butter using a blender or 2 knives until it resembles coarse cornmeal.

  8. Sprinkle water and mix well with hand to form ball.

  9. Knead lightly.

  10. Sprinkle flour on a board and roll out dought into 1/4″ thick.

  11. Using round cutter about twice the size of a pint glass' diameter, cut the dough into pieces.

  12. Fill each piece of cut dough with 2 tbsp. of sauted fillings in the middle of the dough.

  13. Fold the dough in half on top of the filling like a taco, then roll up the seam slightly to prevent the filling from coming out.

  14. Brush the top of each pastry with egg yolk or milk.

  15. Arrange on a greased baking sheet.

  16. Bake in preheated oven about 15 minutes until crust is golden brown.
