Easy to make Chicken dish with stuffing and melted cheese

Recipe Ingredients for Chicken Eileen

6 oz Stuffing Mix (1 package)
16 oz Boneless, Skinless Chicken Breasts (about 4 pieces)
8 slices Reduced Fat Swiss Cheese (about 1 oz per slice. You can also use sliced Mozzarella, Pepperjack, or another cheese if desired)
1 cup Fat Free Chicken Gravy

Recipe Directions for Chicken Eileen

  1. Preheat oven to 350d

  2. Prepare Stuffing according to package directions and set aside.

  3. With kitchen mallet, pound chicken breasts until they are about 1/2 inch thick.

  4. Place a slice of cheese on each chicken breast, followed by a scoop of prepared stuffing

  5. Fold up each chicken breast, secure with toothpicks, and then place in a 13x9 baking dish sprayed w/ Pam

  6. Bake for 40-45 minutes or until chicken is cooked through.

  7. Meanwhile, heat gravy according to directions.

  8. Remove chicken from oven, remove toothpicks, and top each chicken piece with another slice of cheese.

  9. Bake 1-2 more minutes or until cheese melts.

  10. Remove from oven and top each piece with 1/4 cup gravy.
